Well, hello there! Long time no blog. (4 months to the day, to be exact!)

That is a shocking amount of time to have gone sans blogging, especially considering that I’d been going pretty strong – at least a couple times per month – for the last 5 years.

(OK, real talk, it was 4 months to the day when I originally wrote this post, but it has legit sat in my Drafts pile for a whopping 12 days. Now you guys see what I’m talking about!)

Not too long after my last post, I got a promotion at work. In the months since, it feels like there have been quite a few weeks, and probably¬†even month-long stretches really, where work and my “extra-curricular” life are so hectic that all I want to do when I get home (which is often not til 8pm) is have a glass of wine and veg out on the couch. What I Ate Wednesday – New York edition!

Look at that, another WIAW post!

Hosted by Jenn over at Peas & Crayons, What I Ate Wednesday is an opportunity for wannabe-foodies-slash-voyeurs like me to see what other bloggers eat on a regular day. Such an awesome way to think of ideas to get you out of a food rut. However, there’s nothing regular about today’s edition – I’m just sharing all the food I ate on vacation ūüėČ

My parents, brother and I got back late last night from New York after an amazing week with family and friends! Though we were there for a whole 7 days, I was actually only in New York City for the weekend + Monday. The rest of the time was spent all over Long Island (Smithtown, Ronkonkoma, Sayville, Amity Harbor, Lynbrook, Farmingdale…you name it, we went there!) visiting family and enjoying wedding festivities.

First thing’s first – after arriving Wednesday morning on a red-eye, we went to my grandpa’s house in the evening and asked him where he wanted to go for dinner. He of course took us to his favorite New York pizza spot, Joe’s Pizza in Copiague/Amity Harbor. Those weird worm lookin’ things were actually sausage, and were also amazing and delicious.

This was probably the one and only healthy breakfast I had the entire trip, haha. Most mornings I slept in till 10 or 11am (I tried to stay on West Coast time while we were there), so we’d just go straight to lunch. This was actually also the morning of the wedding, so it was definitely a good idea to get a good workout and a healthy breakfast in before drinking and eating the night away!

After a super adorable ceremony at the church, we all went back to the hotel to get ready and piled into the party bus that took us to the reception. First was a Cocktail Hour, complete with 4 food stations just like this one and an open bar. Heaven!

Followed by crab risotto topped with a couple’a shrimp!

{Please note that at least 15 minutes of dancing ensued¬†in between each of these courses. So much dancing….}

My main course was chicken and a side of lasagna, but apparently I dug in too quickly to snap a photo. But I got the cake!

YUM. I’m not a huge fan of fondant, but I definitely liked that there was chocolate and vanilla!

The next day (Saturday) was spent relaxing at my aunt and uncle’s house (the mother and father of the bride) and avoiding hangovers…

Someone busted out this amazing PASTA PIZZA. That’s right. PASTA. On PIZZA. I was a little hesitant, but it was seriously amazing. Perfect use for leftover baked ziti! Carbs on carbs on carbs.

After that, it was off to the city for me:

I stayed with my close friends Joanna and Alex, and this is the view from their rooftop lounge in the financial district….. I KNOW.

On Sunday, Alex humored me by letting me drag him to Rockefeller Center to take my picture at 30 Rock. As soon as I realized Bouchon Bakery was right next door, I HAD to go buy some overpriced macarons. I got the cheaper mini variety so I could sample a bunch: funfetti, caramel, pistachio, and vanilla. Loved the caramel flavor the best, but the macaron texture of the vanilla was so so so perfect!

Oh and then on our way from Rockefeller Center to the High Line, this happened:

Me: “Oh look, Alex! First Date! That’s the Broadway show Zachary Levi is in! He is like the epitome of what I find attractive. Seriously, when I think in my head of what a hot guy looks like…it’s him.”
Alex: “Uh, okay…”
*2 seconds later* *spots Zachary Levi standing 10 feet away*
Me: “OMYGOD OMYGOD OMYGOD¬†OMYGOD¬†OMYGOD¬†OMYGOD¬†”

— Sadly not an exaggeration.

After walking the High Line and making a lil trip to Whole Foods, Alex and I made some awesome “deep dish” pizza:

The next morning I woke up to texts from Joanna asking what kind of bagel I wanted.. YUSSSSS. I went with a whole wheat everything bagel toasted with cream cheese, and it was amazing. New York bagels are seriously in their own league, SO good.

Then it was back to Long Island…

And more pizza from Joe’s! I didn’t get a picture of our second time there, but we got a Sicilian pizza like this one and I liked it even more.

Fast forward to our last day –> we were headed to my mom’s college roommate Linda’s house and decided to bring Italian Cookies. AKA probably one of my favorite things about Long Island- they’re at all the Italian bakeries there and they are amazing. My favorite are the kinds dipped in chocolate, but my momma likes the ones that have jelly sandwiched between them.

Little did we know Linda’s daughter had also made us all a yogurt/custard/fruit parfait! We feasted on bagels for breakfast, then sandwich wraps for lunch, and definitely had full bellies when we got back on the plane.

As you can see, we ate real well. Thanks to a couple of workouts, a ton of walking in the city, and a general tendency to not overeat, I think I came out of this vacation with only 1 pound gained! This is a first for me ūüėõ And now I’m trying to brainstorm ways to get back ASAP.

Fitness Friday – on Vacation

Something I’ve never been great at is exercising on vacation. Who’s with me? (99% of everyone, I’m guessing :-P)

When we come to New York on vacation to visit family, we know we’ll be eating the whole time, so, to be honest, my “healthy diet” often goes out the window…and I’m okay with that. It’s called vacation!

But to offset some of that eating, I decided to make an effort to exercise this time around. I wanna look good in my dress today….it’s wedding day!

Happy wedding day to my beautiful cousin Kimberly and her fiancé Brian, who has pretty much been in our family for 10 years anyway :-)

Anyhizzle, on with the workouts!

I got my elliptical + abs in on my lunch break on Monday, amidst a crazy 2 days at work that included scheduling 30+ meetings for my bosses (to take place over 2 days) and training my temp.

The next day, we were taking an 11:50pm red eye from Sacramento –> NYC. I decided to go for a run in the evening, thinking I’d wear myself out enough to sleep on the plane.

It worked! Kinda. I was exhausted by the time we were at our gate. Then, we were delayed 20-30 minutes, and the anxiety associated with that mess just woke me up more. I slept about 45 minutes out of our 5-hour flight. Lets just say I was not the happiest camper to deal with when we landed at JFK at 8:30am. Our waitress at IHOP got my order wrong and I was pretty much crying in our booth….drama queen! Needless to say, I didn’t have the energy to exercise on Wednesday, and that was A-okay.

Yesterday morning I hit up the elliptical in our hotel gym, but couldn’t do much more than that since the gym was tiny and occupied by 2 wannabe guidos.

So I improvised and did some ab stuff on the floor in me & my brothers room, complete with my boom box iPad. Depending on whether its raining outside (it has been SO humid), I will either go for a run this morning or repeat my elliptical sesh. Definitely wanna work off some of the drinks we’ll be having later!

Weekend in Photos

Yes, another Weekend in Photos post… it seems like forever since I’ve posted a Meatless Monday recipe! A full THREE months (my last was these Red Pepper & Chickpea Veggie Burgers)…sorry guys. I actually have photos and a recipe for an easy weekend breakfast hash that I’ve been meaning to share, but I forgot to upload the pictures from my home computer last night so you’ll have to wait till next week! I’ve got an even better recipe later this week that will surely tide you over ’till then, which leads me to my first picture of the weekend…

I came home from work on Friday with a can of garbanzo beans and one goal: to recreate the avocado-cilantro hummus I bought at the Farmer’s Market a couple weekends back. I’m happy to report it was a smashing success! I almost finished the entire batch by Saturday evening…. :-)

On Friday night, I had plans to check out a new spot with my friend Shannon, whose cousin from Spain was visiting. We went to Vanguard, which is actually located on the ground floor of the building where I work! It felt kinda weird to be sitting outside enjoying a drink within eye-shot of the lobby I sleepily walk through every day at 8:30am and 5:30pm. But it was a gorgeous venue, super classy and pretty chill since it was more of a lounge than a club.

As I told you all on Friday, all I wanted to do on Saturday morning was go for a nice long run and hit up the Farmer’s Market. My mom called and made plans for early in the afternoon, so I decided to combine the two- what was going to be a 3 mile run followed by a ride to the Farmer’s Market ended up as a 3.25 mile run ending AT the market. Once there, I finally went for it and tried the Kombucha Truck! I had Synergy Gingerade, which was awesome since I love ginger. Would it be weird to put kombucha in my Whiskey Gingers from now on? Is that kind of defeating the purpose of kombucha being healthy?? Haha.

I also picked up summer squash (every week I get assorted summer squash from the same stand – next week they said they might have cherry tomatoes WAHOO!), a purple cauliflower, and some shiitake mushrooms!

We have a family wedding in New York in August, and my mom and I had been procrastinating our dress shopping. East Coast weddings require something a bit more formal than my go-to ‘California Casual’ wedding outfits. We left for the mall at 12:30pm and didn’t leave until nearly 5 PM!!! Oh, except around 3:30 we drove to ANOTHER mall. It was an intense day, people. I found a dress I liked right off the bat (see that little red number above), but red doesn’t do much for my complexion and hair color.

My mom found a nice navy blue number that she loved (and was comfortable in! SUPER important for what’s sure to be a hot and humid wedding), and I kept looking. I came home empty handed, but looked on the Macy’s website and found the dress I loved in yellow. It’s hard to judge from a picture, but I’m gonna give it a shot and see how it looks! Yellow has worked on me before (see this picture from my About Me)…I may require input from you all, so stay tuned :)

That night, we went to Napa to spend some time with T-Man’s mom before she moves…she’s moving to DENVER this week! It will be strange not having her an hour away anymore. She has treated us to some amazing dinners and wine tastings during our visits over the last couple of years. Sad! But excited for her to start a new chapter of her life.

After saying goodbye, we joined T-Man’s dad, step mom, step siblings, and a few friends for a fantastic meal for his step brother’s 30th birthday. Since the last time I visited, they had built an addition to their dining room that is amaazing. It’s a sun room, complete with a full dining table, kitty apartment, and lush plants. The meal involved some Filipino favorites and two “semi homemade” Angels Food cakes :)

We got home in time to catch the Mad Men season finale right as it was airing on the West Coast (though it was DVR’ed earlier so we still got to fly through the commercials!)…very interesting episode. Such a strange season of Mad Men this was. It felt so cerebral…After each episode I just needed to sit and think and analyze!

That’s it for now! Didn’t take too many pictures this weekend so unfortunately for you guys, if you follow me on Instagram you likely saw most of these. Either way, it was a good weekend. It’s raining outside right now, but next weekend is expected to be in the triple digits. It’s a real mixed bag over here!

An Ode to my Cast

Dear misshapen purple cast:

You helped to heal my broken hand,

You’ve made my bone anew.

But live with you another day,

I surely cannot do.

We had some fun on July 4th,

I even tried to play, (dodgeball)

But if you asked, “Katie, would you like your hand back?”

I’d quickly say OK!

I’d cook the same delicious food

With many fewer expletives.

I’d bare both arms, to the weddings

Of my most beloved friends and relatives.

My poor boyfriend would get a break

From carrying all my stuff.

I’d go back to my weight lifting routine,

And actually (maybe) look tough.

Lucky for me, that day has come,

You come off on Monday!

Sorry, but I will not miss you,

So good riddance, good bye, good day!

Another Wedding Weekend in Photos

Another weekend, another wedding.

OK, so I know that’s not actually a thing. But it feels like it! Just this summer, I’ve been to weddings in June, July, and now that we’ve hit August, might as well go to another! This time, it was a family affair…my oldest cousin Evan married his beautiful girlfriend Ashley, who has grown to be a part of our family these past 3-4 years — and my grandparents both got to see their first grandchild get hitched!

After getting a half day on Friday in honor of Fiesta, I went to my parents house and hung out with my mom while cooking up some stuff..

Lunch of champions with mom: tortilla chips, pita chips, hummus, guac, salsa, couscous… And a margarita slushie. — Pizzas for all! One special one for which the recipe is coming…& one half veggie half cheese (for my parents’ 6-year old godson)

It was a wonderful day for a wonderful couple. The setting was beautiful and it was all outdoors (the weather turned out perfect!) at a really nice home in Santa Rosa.

Back at home, where our evening bar TV choices ranged from the Mars Curiosity landing to Oscar Pistorius‘s inspiring race.

Weekend in Photos: Wedding Edition

After 3-4 days of 100+ degree days last week, we got an almost perfect weekend here! Luckily for my high school friend Ryan, it was only in the mid-high 80’s all weekend, because…

He got married! It was up in the Sierras past Placerville, and completely outdoors from ceremony to reception! So you can see why the weather played an important role ūüėČ It was the first of two weddings I’ll be attending with my cast this summer — luckily since I knew very few people at the wedding, I only had to tell the story of how I broke it 2 or 3 times.

That may not be the case when my cousin Evan gets married in a couple of weeks – my dad’s family is LARGE, and I imagine I’ll be explaining my giant purple cast to lots of extended family members!

All in all, it was a great weekend, especially since T-Man got the night off to come with me to the wedding :-)

The Happy and the Sad

Let me first start with the sad.

Oh….. My….. GOD!

I know barely 12 hours have passed since the episode aired, so I don’t want to spoil it for anyone who hasn’t seen it yet. But…A little part of me died last night. Last week with Joan was heartbreaking enough, and what she walked in on this week…SIGH!

It was so tragic, and I couldn’t get a certain image out of my head all night. I don’t think an episode of television has ever made me feel so uncomfortable and genuinely sad. A true testament to how well-written and how human all of Mad Men’s characters are.
